Savory Kale & Hummus Wraps, with black beans, mushrooms and spicy garlic Recipe
Here's to last minute dinners on a Monday night, rainy drives home, soaked to the bone from running in the rain to make it before the last vegetable vendor closes shop at the Kea'au farmer's market, yep, all is well, tasty and cozy in my world.
I've been debating on trying a full blown plant based diet, since Rey, needs more than I do when it comes to nutritional needs, but after being turned on to a new book called
Forks over Knives, by my soul sister Paula Noel, I decided to give it a go. Why not, since most of my clients keep on asking me nutritional questions, which ranges the gambit from what carbs to eat, and when, to what foods are good for repairing this type of injury. As well as, disease related diet questions, from cancer recovery, to diabetes, heart diseases, and so on.
I don't have the clinical credentials to back what's being listed in this amazing little book, and I don't and will not promote specific diets, it's just not my thing, but I do believe in educating myself and my clients on what's out there. Here's the first of my experimental dishes, which I must say turned out pretty dam great. .
Savory Roasted Red Pepper Hummus Kale Wraps, with black beans, pumpkin, mushrooms, garlic, and carrots.
Ingredients: Hummus of your choice, I used a roasted red pepper spread, Or you can prepare your own. Half a can of black beans, drained. 1 medium carrot, peeled and sliced, yellow pumpkin, or you can use butter nut squash if you like, cubed. White button mushrooms, rough chopped, whole garlic gloves, light extra virgin olive oil, Two large handfuls of kale chopped. Red pepper flakes to taste. Store bought salsa. Organic whole wheat tortilla wraps.
Directions: Oil your pan, place pumpkin, carrots, and garlic in first since it takes the longest to cook. Toss till lightly brown and pumpkin is tender, don't over cook. Add beans and mushrooms, incorporate well, but don't mash. Add kale, let steam, and sit on the side.
Warm tortilla wraps in a clean skillet, spread a table spoon of hummus in the center of wrap, and add your veggies, top with salsa, serve. Other toppings that would be great : Guacamole, lemon drizzle, a hotter sauce if you like it really spicy.
